We're so proud to be partnering with the Agariya community, a tribe that has been working in the salt district of Gujarat, India for generations, to bring you this solar-powered, earth-filtered, and hand-pounded salt. Using solar pumps provided by our local NGO partners, the Agariyas harvest this bright, inland salt from the desert’s underground water table. The salt’s high-mineral content is preserved through a slow-filtration process through the desert soil. In partnership with a local women's self-help group, whose members then hand-pound the salt to the perfect texture for everyday use, we are able to ensure that the salt retains as much flavour as possible. Our salt comes from the famous desert salt pans in the Wild Ass Sanctuary and Little Rann of Kutch in Gujarat. After Gandhi's Dandi Salt March in 1930, Gujarati salt became a symbol of freedom and an act of nonviolent civil disobedience against the British Empire. We like to think of ours as emblematic of sunshine and freedom alike.

Grown in the historic, rain-fed, sugarcane-growing Daund region, our jaggery is grown and processed by Kantilal Randive, a well-known soil health expert. Our sugarcane is intercropped with dhaincha (sesbania bispinosa), chickpeas, and wheat for soil health. Its juice is clarified using traditional methods — incorporating wild okra to remove the impurities — for a clean, nutty jaggery powder! Use the jaggery to sweeten your cups of chai and haldi doodh, and for other drinks, baked goods, and more! Given that jaggery has a high molasses content (AKA the nutritious brown stuff that is usually pulled out of sugar during the refining process), expect a deep, rich flavor that comes in clutch when you're subbing it in for any sugars.

Your rose petals are organically grown by Parvathi Menon and her wonderful team on a 10 acre farm heaving with an abundance of bananas, limes, avocados and rain-fed turmeric in northern Tamil Nadu. After two years of trial and error, Parvathi finally figured out how to grow the Damask Rose (or Panneer Rose in Tamil), that whilst prized for being incredibly fragrant, is also known to be extremely delicate and very high maintenance, especially when grown regeneratively, without pesticides. Since the rose petals need to be processed everyday when they are perfectly in bloom, Parvathi designed an ingenious solar powered dehydration system that is just gentle enough to help the petals retain their deep colouring and lock in their renowned fragrance. We’ve been grinding small batches into our coffee beans, topping our desserts with these bursts of pink, and even steeping them in cream for a little floral joy in our everyday lives.

Grown by our beloved Kasaraneni family amidst marigolds, bananas, and black rice on their 3rd generation farm. Whilst Mr. Prabhu Kasaraneni’s family has been farming for three generations, he is a self-taught organic farmer who began growing heirloom Pragati turmeric in 2015, with assistance from the Indian Institute of Spice Research. This is the spice Sana started the company with! In search of an heirloom turmeric that was regeneratively grown as well as delicious, she was recommended to Mr. Prahbu Kasareneni by the Indian Institute of Spice Research. Prahbu was a young idealistic farmer, and the only one in his area to start growing regeneratively, which initially brought critique from nearby farmers, until they saw how well he was doing. Today, it is still one of our most well-loved spices, and for good reason—it's delicious!

Kimchi Seasoning is a staple in Korean cuisine, known for its deep, spicy, and umami-rich flavor. Traditionally used to make kimchi, this versatile seasoning can also enhance a variety of plant-based dishes. Whether you're a fan of Korean food or just looking to try something new, kimchi seasoning is a great addition to your pantry. In this blog, we’ll explore the benefits, uses, and environmental impact of kimchi seasoning, along with cooking tips and comparisons to other seasoning blends.

What is Kimchi Seasoning?

Kimchi seasoning is a blend of spices and ingredients that gives kimchi its signature spicy, tangy, and umami flavors. While kimchi itself is made by fermenting vegetables with spices, kimchi seasoning can be used to infuse those same bold flavors into a wide range of plant-based meals. The main ingredients in kimchi seasoning typically include:

  • Gochugaru (Korean red pepper flakes): Adds heat and smokiness.
  • Gochujang (fermented chili paste): Provides umami and a touch of sweetness.
  • Garlic: Offers a punch of fresh, spicy flavor.
  • Ginger: Adds warmth and complexity.
  • Fish sauce or soy sauce: Offers a salty, savory base (use soy sauce for vegan options).
  • Sesame oil: Adds a nutty aroma and richness.

This combination of ingredients creates the signature taste that is both spicy and savory, perfect for plant-based dishes.

Benefits of Kimchi Seasoning

1. Rich, Bold Flavor

Kimchi seasoning is known for its ability to add a deep, savory flavor with a hint of spice and tang. It transforms simple dishes into bold, flavorful meals without the need for meat.

2. Health Benefits

The ingredients in kimchi seasoning, particularly garlic, ginger, and gochujang, offer a variety of health benefits:

  • Garlic: Known for its immune-boosting and heart-healthy properties.
  • Ginger: Helps with digestion and has anti-inflammatory effects.
  • Fermented Ingredients: Fermented foods like kimchi and gochujang are rich in probiotics, which promote gut health.

3. Versatility

Kimchi seasoning isn’t just for making kimchi. You can use it to flavor soups, stir-fries, marinades, salads, and roasted vegetables. Its bold flavor profile makes it perfect for a variety of plant-based dishes.

Uses of Kimchi Seasoning

1. Kimchi

Of course, the most traditional use of kimchi seasoning is for making kimchi itself. Simply combine it with vegetables like napa cabbage or radish, along with the other ingredients, and allow it to ferment for a few days to develop a rich, tangy flavor.

2. Vegetable Stir-Fry

Add kimchi seasoning to a stir-fry for a smoky, spicy kick. Toss your favorite vegetables like bell peppers, mushrooms, and zucchini in the seasoning and stir-fry for a quick, flavorful meal.

3. Soups and Stews

Kimchi seasoning can be used to season soups and stews, giving them a spicy, umami depth. It pairs well with hearty vegetables and plant-based broths.

4. Marinades for Tofu or Tempeh

Create a savory marinade by mixing kimchi seasoning with soy sauce, sesame oil, and a sweetener like maple syrup. Marinate tofu, tempeh, or seitan to infuse them with a rich, spicy flavor before grilling or stir-frying.

5. Vegan Kimchi Tacos

For a fun fusion dish, use kimchi seasoning to make vegan kimchi tacos. Pair it with plant-based protein, lettuce, and a drizzle of vegan mayonnaise for a unique and flavorful meal.

Frequently Asked Questions (FAQs)

1. Is Kimchi Seasoning Vegan-Friendly?

Yes, kimchi seasoning is vegan-friendly as long as you use soy sauce or a plant-based alternative to fish sauce. Gochujang and the other spices used in the seasoning are plant-based, making it a great addition to vegan dishes.

2. Can I Adjust the Spice Level of Kimchi Seasoning?

Yes, you can adjust the spice level to your preference. If you like it spicier, you can add more gochugaru (Korean red pepper flakes) or gochujang (fermented chili paste). For a milder version, simply reduce the amount of chili paste or use a less spicy pepper option.

3. How Do I Make Kimchi Seasoning at Home?

You can easily make your own kimchi seasoning at home with the following ingredients:

  • 2 tablespoons gochugaru (Korean red pepper flakes)
  • 1 tablespoon gochujang (fermented chili paste)
  • 2 cloves garlic (minced)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger (grated)
  • 1 teaspoon brown sugar (optional)

Mix these ingredients together and store in an airtight container. This homemade seasoning is perfect for marinating, stir-frying, and more.

4. How Should I Store Kimchi Seasoning?

Kimchi seasoning should be stored in an airtight container in a cool, dark place. It can last for several months, especially if made with dried spices like gochugaru. For homemade seasoning, it’s best to use it within 3-6 months for optimal flavor.

Cooking Tips for Using Kimchi Seasoning

1. Use in Moderation

Kimchi seasoning is potent, so start with a small amount and adjust as needed. Its bold flavors can quickly overwhelm a dish if used in excess.

2. Pair with Fresh Ingredients

Pair kimchi seasoning with fresh vegetables like cabbage, cucumbers, or carrots to balance out the rich, spicy flavors. Fresh herbs like cilantro or mint can also help brighten up the dish.

3. Combine with Sweeteners

To balance the spice, consider adding a touch of sweetener like maple syrup, coconut sugar, or even fruit juice. This will enhance the overall flavor profile and create a harmonious dish.

4. Experiment with Acidity

Kimchi seasoning has a natural tang, but adding a bit of vinegar or citrus juice can help bring out the flavors even more. This is especially useful for stir-fries and marinades.
