We're so proud to be partnering with the Agariya community, a tribe that has been working in the salt district of Gujarat, India for generations, to bring you this solar-powered, earth-filtered, and hand-pounded salt. Using solar pumps provided by our local NGO partners, the Agariyas harvest this bright, inland salt from the desert’s underground water table. The salt’s high-mineral content is preserved through a slow-filtration process through the desert soil. In partnership with a local women's self-help group, whose members then hand-pound the salt to the perfect texture for everyday use, we are able to ensure that the salt retains as much flavour as possible. Our salt comes from the famous desert salt pans in the Wild Ass Sanctuary and Little Rann of Kutch in Gujarat. After Gandhi's Dandi Salt March in 1930, Gujarati salt became a symbol of freedom and an act of nonviolent civil disobedience against the British Empire. We like to think of ours as emblematic of sunshine and freedom alike.

Farm Story

Grown in the historic, rain-fed, sugarcane-growing Daund region, our jaggery is grown and processed by Kantilal Randive, a well-known soil health expert. Our sugarcane is intercropped with dhaincha (sesbania bispinosa), chickpeas, and wheat for soil health. Its juice is clarified using traditional methods — incorporating wild okra to remove the impurities — for a clean, nutty jaggery powder! Use the jaggery to sweeten your cups of chai and haldi doodh, and for other drinks, baked goods, and more! Given that jaggery has a high molasses content (AKA the nutritious brown stuff that is usually pulled out of sugar during the refining process), expect a deep, rich flavor that comes in clutch when you're subbing it in for any sugars.

Hella cocoa butter, baby! Made from Anamalai Estate’s award winning cacao beans, this is a beautiful showcase of the potential of Indian cacao. The fact that these beans are grown on a single estate means that you’re tasting a true expression of terroir i.e. the soil they were planted in, and the seasons they grew through. The cacao is intercropped with nutmeg and coconut palms, on land that was originally a eucalyptus grove, then a guava orchard, and now a diverse ecosystem where desi cows roam by day, and elephants scratch their backs on the coconut palms by night! No added sugar. 100% raw cacao powder.

Your rose petals are organically grown by Parvathi Menon and her wonderful team on a 10 acre farm heaving with an abundance of bananas, limes, avocados and rain-fed turmeric in northern Tamil Nadu. After two years of trial and error, Parvathi finally figured out how to grow the Damask Rose (or Panneer Rose in Tamil), that whilst prized for being incredibly fragrant, is also known to be extremely delicate and very high maintenance, especially when grown regeneratively, without pesticides. Since the rose petals need to be processed everyday when they are perfectly in bloom, Parvathi designed an ingenious solar powered dehydration system that is just gentle enough to help the petals retain their deep colouring and lock in their renowned fragrance. We’ve been grinding small batches into our coffee beans, topping our desserts with these bursts of pink, and even steeping them in cream for a little floral joy in our everyday lives.

Grown by our beloved Kasaraneni family amidst marigolds, bananas, and black rice on their 3rd generation farm. Whilst Mr. Prabhu Kasaraneni’s family has been farming for three generations, he is a self-taught organic farmer who began growing heirloom Pragati turmeric in 2015, with assistance from the Indian Institute of Spice Research. This is the spice Sana started the company with! In search of an heirloom turmeric that was regeneratively grown as well as delicious, she was recommended to Mr. Prahbu Kasareneni by the Indian Institute of Spice Research. Prahbu was a young idealistic farmer, and the only one in his area to start growing regeneratively, which initially brought critique from nearby farmers, until they saw how well he was doing. Today, it is still one of our most well-loved spices, and for good reason—it's delicious!

What is Green Chilli Paste?

Green chilli paste is a blend of fresh green chilies, often mixed with garlic, ginger, and sometimes vinegar or lemon juice to balance the heat and add a depth of flavor. Key Ingredients in Green Chilli Paste:

  • Fresh Green Chilies: Provide the essential heat and vibrant green color.
  • Garlic: Adds a rich, pungent flavor that complements the heat of the chilies.
  • Ginger: Brings a subtle warmth and complexity to the paste.
  • Lemon Juice or Vinegar: Offers acidity, balancing the paste's heat.
  • Salt: Enhances and brings all the flavors together.

Why is Green Chilli Paste Popular?

1. Intense, Fresh Heat

The fresh green chilies in the paste provide a clean, crisp heat that is different from dried chilies or powders. It enhances the overall flavor profile of your dishes without overpowering them.

2. Convenience in Cooking

Green chilli paste offers a quick and convenient way to add spice to your cooking. Whether you're preparing a quick stir-fry or a complex curry, a spoonful of this paste can provide an instant flavor boost without the need to chop and prepare individual ingredients.

Chilies contain capsaicin, a compound that is known to increase metabolism. Adding green chilli paste to your meals can help with weight management by boosting fat burning and improving digestion.

3. Supports Digestive Health

The combination of chilies, ginger, and garlic in green chilli paste can help with digestion by stimulating the production of digestive enzymes. It may also reduce bloating and indigestion.

4. Versatile for Vegan and Gluten-Free Diets

Green chilli paste is naturally vegan and gluten-free, making it a versatile ingredient for anyone following a plant-based or gluten-free diet.

Uses of Green Chilli Paste

Green chilli paste works wonders in stir-fried vegetable dishes. Simply add it to your wok along with your favorite vegetables like bell peppers, onions, and zucchini for a quick, flavorful meal.

How to Make Green Chilli Paste at Home

Ingredients for Homemade Green Chilli Paste:

  • 8-10 fresh green chilies (adjust based on spice preference)
  • 4-5 garlic cloves
  • 1-inch piece of ginger
  • 1 tablespoon lemon juice or vinegar
  • Salt to taste
  • 2 tablespoons olive oil or water (for blending)

Instructions:

  1. Prepare the Chilies: Remove the stems from the green chilies and roughly chop them.
  2. Blend Ingredients: Combine the green chilies, garlic, ginger, lemon juice, and salt in a blender or food processor. Add olive oil or water for easier blending.
  3. Blend into a Smooth Paste: Blend the ingredients until you get a smooth paste. Adjust the consistency with more water or oil if necessary.
  4. Store: Transfer the paste to an airtight container and store it in the refrigerator for up to one week. For longer storage, freeze the paste in small portions.

Seasonal and Holiday Favorites

1. Winter Comforts

During colder months, green chilli paste can be used in warming soups and stews. Its heat provides a comforting balance to the cold weather. Consider adding it to lentil soup or a spicy vegetable broth.

2. Holiday Celebrations

Green chilli paste can also be used in holiday meals, especially when paired with appetizers. Serve it as a spicy dip with vegetarian spring rolls or mix it into stir-fried vegetables as a side dish for holiday feasts.

Comparison: Green Chilli Paste vs. Chili Powder

1. Flavor and Heat Level

  • Green Chilli Paste: Has a fresher, more vibrant heat, and provides a burst of flavor thanks to the combination of fresh chilies, garlic, and ginger.
  • Chili Powder: Offers a more muted, earthy heat. It doesn’t have the same fresh vibrancy as green chilli paste.

2. Usage

  • Green Chilli Paste: Works best in stir-fries, sauces, and dishes where a fresh, bright heat is needed.
  • Chili Powder: Typically used in dry rubs, stews, and soups, where a deeper, slower heat is desired.

3. Preparation

  • Green Chilli Paste: Requires blending fresh ingredients, which takes a little more time and effort.
  • Chili Powder: Is a pre-ground spice, ready to use immediately without preparation.

Impact of Food Waste on the Environment

Food waste contributes significantly to environmental damage, from the overuse of natural resources to increased greenhouse gas emissions. By making green chilli paste at home, you can reduce packaging waste from store-bought products and use fresh ingredients that are often available in your kitchen.

How to Reduce Food Waste with Green Chilli Paste:

  • Use Leftover Chilies: If you have surplus green chilies, they can be turned into a paste, which can be stored for longer use.
  • Repurpose Scraps: Save the stems of the chilies and other vegetable scraps for composting.
  • Efficient Storage: Freeze leftover green chilli paste to prevent waste and prolong its shelf life.
