Proudly grown by a cooperative of farmers in Sirārakhong and sourced for us by our friends Zeinorin & Alan of Hillwild. Legend has it that the villagers' ancestors found these exquisitely long, vibrant chillies growing in the wild on a hunting trip that they then brought home and have made a part of their daily cuisine ever since. Many nearby villages have tried to grow the Sirārakhong Hāthei chillies, but something about the terroir of Sirarakhong produces the very best of the best! - Read The Diaspora Chilli Primer that our recipe editor Asha put together for more information about the differences between all of our chillies, including how to dehydrate whole chillies, and ideas for how to use them!

We're so proud to be partnering with the Agariya community, a tribe that has been working in the salt district of Gujarat, India for generations, to bring you this solar-powered, earth-filtered, and hand-pounded salt. Using solar pumps provided by our local NGO partners, the Agariyas harvest this bright, inland salt from the desert’s underground water table. The salt’s high-mineral content is preserved through a slow-filtration process through the desert soil. In partnership with a local women's self-help group, whose members then hand-pound the salt to the perfect texture for everyday use, we are able to ensure that the salt retains as much flavour as possible. Our salt comes from the famous desert salt pans in the Wild Ass Sanctuary and Little Rann of Kutch in Gujarat. After Gandhi's Dandi Salt March in 1930, Gujarati salt became a symbol of freedom and an act of nonviolent civil disobedience against the British Empire. We like to think of ours as emblematic of sunshine and freedom alike.

Grown in the historic, rain-fed, sugarcane-growing Daund region, our jaggery is grown and processed by Kantilal Randive, a well-known soil health expert. Our sugarcane is intercropped with dhaincha (sesbania bispinosa), chickpeas, and wheat for soil health. Its juice is clarified using traditional methods — incorporating wild okra to remove the impurities — for a clean, nutty jaggery powder! Use the jaggery to sweeten your cups of chai and haldi doodh, and for other drinks, baked goods, and more! Given that jaggery has a high molasses content (AKA the nutritious brown stuff that is usually pulled out of sugar during the refining process), expect a deep, rich flavor that comes in clutch when you're subbing it in for any sugars.

Hella cocoa butter, baby! Made from Anamalai Estate’s award winning cacao beans, this is a beautiful showcase of the potential of Indian cacao. The fact that these beans are grown on a single estate means that you’re tasting a true expression of terroir i.e. the soil they were planted in, and the seasons they grew through. The cacao is intercropped with nutmeg and coconut palms, on land that was originally a eucalyptus grove, then a guava orchard, and now a diverse ecosystem where desi cows roam by day, and elephants scratch their backs on the coconut palms by night! No added sugar. 100% raw cacao powder.

Your rose petals are organically grown by Parvathi Menon and her wonderful team on a 10 acre farm heaving with an abundance of bananas, limes, avocados and rain-fed turmeric in northern Tamil Nadu. After two years of trial and error, Parvathi finally figured out how to grow the Damask Rose (or Panneer Rose in Tamil), that whilst prized for being incredibly fragrant, is also known to be extremely delicate and very high maintenance, especially when grown regeneratively, without pesticides. Since the rose petals need to be processed everyday when they are perfectly in bloom, Parvathi designed an ingenious solar powered dehydration system that is just gentle enough to help the petals retain their deep colouring and lock in their renowned fragrance. We’ve been grinding small batches into our coffee beans, topping our desserts with these bursts of pink, and even steeping them in cream for a little floral joy in our everyday lives.

Grown by our beloved Kasaraneni family amidst marigolds, bananas, and black rice on their 3rd generation farm. Whilst Mr. Prabhu Kasaraneni’s family has been farming for three generations, he is a self-taught organic farmer who began growing heirloom Pragati turmeric in 2015, with assistance from the Indian Institute of Spice Research. This is the spice Sana started the company with! In search of an heirloom turmeric that was regeneratively grown as well as delicious, she was recommended to Mr. Prahbu Kasareneni by the Indian Institute of Spice Research. Prahbu was a young idealistic farmer, and the only one in his area to start growing regeneratively, which initially brought critique from nearby farmers, until they saw how well he was doing. Today, it is still one of our most well-loved spices, and for good reason—it's delicious!

Smoked charcoal seasoning is a unique and versatile ingredient that adds a deep, smoky flavor to a wide variety of dishes. Known for its rich, earthy taste, smoked charcoal seasoning has become a popular addition to kitchens across the world. Whether you are preparing savory dishes, enhancing your plant-based recipes, or exploring new ways to elevate your cooking, smoked charcoal seasoning offers an incredible boost to the flavor profile of your meals.

In this blog, we will explore everything you need to know about smoked charcoal seasoning, including its benefits, uses, environmental impact, and seasonal favorites. Let's dive into the world of smoked charcoal seasoning and discover why it's gaining popularity among chefs and home cooks alike.

What Is Smoked Charcoal Seasoning?

Smoked charcoal seasoning is made by infusing charcoal with wood smoke, resulting in a unique seasoning with a distinctive smoky flavor. Unlike traditional spices, this seasoning is made by using finely ground activated charcoal, often mixed with herbs and spices, to impart a deep, earthy taste that is highly versatile.

Key Features of Smoked Charcoal Seasoning

  • Rich Smoky Flavor: Smoked charcoal seasoning brings a complex, smoky flavor to dishes, enhancing the taste of vegetables, grains, and plant-based proteins.
  • Activated Charcoal: The activated charcoal used in this seasoning has properties that may offer detoxification benefits, though it's primarily used for flavor in cooking.
  • Versatility: It pairs well with a variety of dishes, from roasted vegetables to soups, stews, and even grilled foods.

Benefits of Smoked Charcoal Seasoning

Smoked charcoal seasoning is not only delicious but also offers several potential health benefits due to the properties of activated charcoal. Here are some of the benefits it may provide:

1. Supports Digestive Health

Activated charcoal is known for its ability to absorb toxins in the digestive tract. While it is most commonly used in health and wellness products, it may also contribute to better digestion when consumed in small amounts through foods.

2. Rich in Antioxidants

The wood-smoke infusion process used in making smoked charcoal seasoning provides the seasoning with antioxidant properties that help fight oxidative stress in the body.

3. Adds Depth to Plant-Based Dishes

For those following plant-based diets, smoked charcoal seasoning is an excellent way to add a smoky depth to dishes like roasted vegetables, plant-based burgers, or even grain-based salads. It enhances the flavor of plant-based proteins that may otherwise lack that meaty, smoky taste.

4. Detoxifying Properties

Activated charcoal is often used in health supplements for its purported detoxification abilities. While the amount used in smoked charcoal seasoning is small, it can still contribute to your overall wellness when consumed as part of a balanced diet.

How to Use Smoked Charcoal Seasoning

Smoked charcoal seasoning is incredibly versatile and can be used in a variety of ways. Here are some ideas on how to incorporate it into your cooking:

1. Sprinkle on Roasted Vegetables

Smoked charcoal seasoning is perfect for enhancing the flavor of roasted vegetables. Simply sprinkle a small amount over your vegetables before roasting them to give them an irresistible smoky flavor.

2. Add to Soups and Stews

Incorporate smoked charcoal seasoning into soups and stews for added depth. It works well in both light broths and hearty, vegetable-based stews.

3. Mix into Grains and Legumes

Grains like quinoa, rice, and couscous can benefit from the smoky flavor of this seasoning. Add it to your favorite grain-based dishes for a unique twist on flavor.

4. Use in Sauces and Marinades

Smoked charcoal seasoning can be added to sauces or marinades for plant-based proteins. It's an excellent way to infuse flavor into tofu, tempeh, or mushrooms.

Seasonal and Holiday Favorites with Smoked Charcoal Seasoning

Smoked charcoal seasoning can be used to enhance seasonal dishes, making it perfect for the colder months or holiday gatherings. Here are some ideas for incorporating it into your holiday meals:

1. Smoky Holiday Roasts

Whether you're making a plant-based roast or roasting vegetables for a festive meal, smoked charcoal seasoning adds a deep, smoky flavor that pairs perfectly with winter vegetables like squash, carrots, and Brussels sprouts.

2. Winter Stews and Soups

Winter is the perfect time to enjoy hearty, warming stews and soups. Add smoked charcoal seasoning to your favorite plant-based stew to infuse a complex, smoky flavor that will delight your guests.

3. Fall Grains and Legumes

Incorporate smoked charcoal seasoning into fall dishes like barley risotto or lentil salad. The earthy flavor pairs well with the natural sweetness of autumn vegetables like sweet potatoes and pumpkins.

Impact of Food Waste on the Environment

The issue of food waste is becoming increasingly important, especially in the context of climate change. Food waste contributes to the accumulation of greenhouse gases, particularly methane, which is a potent contributor to global warming. Furthermore, the production of food, including spices like smoked charcoal seasoning, requires resources such as water, energy, and labor.

By minimizing food waste, we can help reduce our environmental impact. Here are some strategies for reducing food waste in your kitchen:

1. Use Ingredients Wisely

Smoked charcoal seasoning is highly concentrated, so a little goes a long way. Avoid using excess seasoning that might end up going to waste.

2. Repurpose Leftovers

Use leftover vegetables or grains in soups, stews, or grain bowls. Add a touch of smoked charcoal seasoning to give new life to your leftovers.

3. Store Properly

Properly storing spices and seasonings in airtight containers and keeping them in a cool, dark place will help preserve their flavor and prevent waste.

Smoked Charcoal Seasoning vs. Traditional Smoky Spices

Feature Smoked Charcoal Seasoning Traditional Smoky Spices (e.g., Smoked Paprika)
Flavor Profile Earthy, deep, and rich smoky flavor Sweet and mildly smoky, with varying heat levels
Uses Best for adding depth and complexity to dishes Ideal for enhancing color and flavor in stews and grills
Nutritional Benefits May have detoxifying and antioxidant properties Rich in vitamins and antioxidants, but less detoxifying
Best For Plant-based dishes, roasted vegetables, soups Meats, stews, and as a garnish on dishes

Both smoked charcoal seasoning and traditional smoky spices like smoked paprika bring rich, smoky flavors to dishes. However, smoked charcoal seasoning provides a more intense, earthy flavor and offers unique benefits like potential detoxification. It is also a great option for enhancing plant-based recipes that may lack a smoky depth.

Conclusion

Smoked charcoal seasoning is a flavorful and unique addition to any kitchen. Its rich, earthy smoky flavor enhances a wide variety of dishes, from plant-based meals to hearty stews. Beyond its culinary uses, smoked charcoal seasoning offers health benefits, particularly in digestive health and detoxification. As we become more mindful of our environmental footprint, minimizing food waste and using high-quality, versatile ingredients like smoked charcoal seasoning is a step in the right direction.
