We're so proud to be partnering with the Agariya community, a tribe that has been working in the salt district of Gujarat, India for generations, to bring you this solar-powered, earth-filtered, and hand-pounded salt. Using solar pumps provided by our local NGO partners, the Agariyas harvest this bright, inland salt from the desert’s underground water table. The salt’s high-mineral content is preserved through a slow-filtration process through the desert soil. In partnership with a local women's self-help group, whose members then hand-pound the salt to the perfect texture for everyday use, we are able to ensure that the salt retains as much flavour as possible. Our salt comes from the famous desert salt pans in the Wild Ass Sanctuary and Little Rann of Kutch in Gujarat. After Gandhi's Dandi Salt March in 1930, Gujarati salt became a symbol of freedom and an act of nonviolent civil disobedience against the British Empire. We like to think of ours as emblematic of sunshine and freedom alike.

Grown in the historic, rain-fed, sugarcane-growing Daund region, our jaggery is grown and processed by Kantilal Randive, a well-known soil health expert. Our sugarcane is intercropped with dhaincha (sesbania bispinosa), chickpeas, and wheat for soil health. Its juice is clarified using traditional methods — incorporating wild okra to remove the impurities — for a clean, nutty jaggery powder! Use the jaggery to sweeten your cups of chai and haldi doodh, and for other drinks, baked goods, and more! Given that jaggery has a high molasses content (AKA the nutritious brown stuff that is usually pulled out of sugar during the refining process), expect a deep, rich flavor that comes in clutch when you're subbing it in for any sugars.

Your rose petals are organically grown by Parvathi Menon and her wonderful team on a 10 acre farm heaving with an abundance of bananas, limes, avocados and rain-fed turmeric in northern Tamil Nadu. After two years of trial and error, Parvathi finally figured out how to grow the Damask Rose (or Panneer Rose in Tamil), that whilst prized for being incredibly fragrant, is also known to be extremely delicate and very high maintenance, especially when grown regeneratively, without pesticides. Since the rose petals need to be processed everyday when they are perfectly in bloom, Parvathi designed an ingenious solar powered dehydration system that is just gentle enough to help the petals retain their deep colouring and lock in their renowned fragrance. We’ve been grinding small batches into our coffee beans, topping our desserts with these bursts of pink, and even steeping them in cream for a little floral joy in our everyday lives.

Grown by our beloved Kasaraneni family amidst marigolds, bananas, and black rice on their 3rd generation farm. Whilst Mr. Prabhu Kasaraneni’s family has been farming for three generations, he is a self-taught organic farmer who began growing heirloom Pragati turmeric in 2015, with assistance from the Indian Institute of Spice Research. This is the spice Sana started the company with! In search of an heirloom turmeric that was regeneratively grown as well as delicious, she was recommended to Mr. Prahbu Kasareneni by the Indian Institute of Spice Research. Prahbu was a young idealistic farmer, and the only one in his area to start growing regeneratively, which initially brought critique from nearby farmers, until they saw how well he was doing. Today, it is still one of our most well-loved spices, and for good reason—it's delicious!

Brown Butter Seasoning is a flavorful, aromatic blend that brings a nutty, rich taste to a variety of dishes. This seasoning is made by browning butter to develop its signature flavor, which is then combined with various herbs and spices to enhance the depth of your cooking. Whether used for savory dishes, pasta, vegetables, or even desserts, brown butter seasoning can elevate your culinary creations. In this blog, we will delve into its benefits, uses, and share tips on how to incorporate this versatile seasoning into your meals while reducing food waste.

What is Brown Butter Seasoning?

Brown Butter Seasoning is created by gently cooking butter until the milk solids caramelize, resulting in a deep golden-brown color and a distinctive nutty aroma. This rich base is then mixed with herbs, spices, and other flavorings to form a seasoning that can be used in both sweet and savory dishes.

Primary Ingredients:

  • Brown Butter: The key ingredient, which is made by cooking butter until it turns golden-brown, bringing a nutty, toasty flavor.
  • Herbs and Spices: Ingredients like thyme, rosemary, garlic, or even a pinch of salt and pepper are often combined with the brown butter to create a balanced seasoning.

Benefits of Brown Butter Seasoning

1. Adds Richness to Dishes

Brown Butter Seasoning offers a deep, toasty flavor that adds complexity and richness to any dish. It's a perfect way to enhance the taste of your meals without needing to use heavy sauces or additives.

2. Versatile and Easy to Use

This seasoning can be incorporated into both sweet and savory recipes. It pairs wonderfully with vegetables, pasta, rice, and even baked goods like cookies or cakes.

3. Packed with Nutrients

Brown butter contains healthy fats, which can be beneficial when consumed in moderation. It also contains butyrate, a short-chain fatty acid that supports gut health and may help reduce inflammation.

4. Elevates Everyday Dishes

Even simple recipes like roasted vegetables or a bowl of popcorn can be transformed with a sprinkling of brown butter seasoning. This makes it a valuable pantry staple for home cooks looking to add a gourmet touch to everyday meals.

How to Use Brown Butter Seasoning

1. Season Vegetables

One of the most popular ways to use brown butter seasoning is to season roasted vegetables like carrots, cauliflower, or Brussels sprouts. The nutty, rich flavor complements the natural sweetness of these vegetables.

2. Enhance Pasta Dishes

Brown butter is frequently used in pasta dishes. Simply toss cooked pasta with brown butter seasoning, add some grated cheese, and you have a delicious, simple meal. You can also use it in pasta sauces for added depth.

3. Perfect for Popcorn

Brown butter seasoning is fantastic on popcorn. Melt the butter and mix it with seasoning to create a delicious, flavorful snack that’s sure to impress.

4. Use in Baking

Brown butter seasoning can even be used in baking. Add it to cookies, cakes, or muffins for a nutty flavor that enhances the sweetness of baked goods.

5. Flavor for Rice and Grains

Add a little brown butter seasoning to cooked rice, quinoa, or other grains. It brings richness and an earthy depth that enhances the overall dish.

Cooking Tips for Brown Butter Seasoning

1. Watch the Butter Carefully

When making brown butter, be sure to watch it closely. Once the butter turns golden-brown and emits a nutty aroma, immediately remove it from the heat to prevent burning.

2. Use Fresh Herbs

To maximize the flavor, use fresh herbs when making your own brown butter seasoning mix. Fresh herbs like rosemary, thyme, or sage complement the nuttiness of the brown butter beautifully.

3. Balance with Acidity

Since brown butter has a rich and buttery flavor, balance it with acidity. A squeeze of lemon juice or a splash of vinegar can help to lift the dish and add brightness.

4. Incorporate Salt Carefully

When using brown butter seasoning, be mindful of the salt content. If you’re using salted butter to make the seasoning, you may not need to add much salt to the final dish.
